NC Beer

If you have not had a chance to surf the NC Beer website...you are truly missing out. This site deals with anything and everything pertaining to craft beer in North Carolina, which happens to be the craft beer capitol of the United States. NCBeer.org has lists of local craft breweries across the state, local and state information pertaining to beer sales and brew pub establishments, as well as a heavily updated calender containing various tastings and beer festivals throughout the year. Bottling Day

My dad came to the house to help with the bottling of our Liberty Cream Ale today. He did a wonderful job capping 50 12oz bottles of the sweet nectar we call home brew. This weekend we will be brewing our Imperial IPA dubbed Hoppy Poppy IPA!

Long Overdue Brewing

 It has been a busy summer so far at our house (beach, mountains, summer school for the kids) so I have not had the chance to brew in a while. This week I will be doing a 5 gallon batch of a Cream Stout that my wife Jessica picked out, and I will also be brewing a 5 gallon batch of an Imperial IPA that I am dubbing: Hoppy Poppy IPA in honor of my hippie father!

Busy Day

Jessica and I had a loooong overdue bottling day yesterday. We bottled our Dead Head Ale which topped out at 6.8%ABV due to the 4 week fermentation process...pretty stout!

I also brewed a Honey Bee Ale which was made with a pound of pure local clover honey...the aroma was wonderful! This beer will be our first attempt at secondary dry-hopping, a process that involves adding aromatic hops to the secondary fermenter for 4-7 days before bottling instead of adding them to the boiling process. We will keep you updated on the process and results.

Updates


We are now sipping on our Rita Hayworth Strawberry Blonde...and it is very yummy.

We are bottling our Dead Head Ale this weekend...IF I can get enough bottles cleaned!

It is time to brew again...this upcoming beer is a Honey Bee Ale...brewed with over a pound of pure, local clover honey!

One Batched Bottled, Another One Fermenting

Last week was busy for us here at the Falls Dam Home Brewery. Jessica and I bottled our Heritage Irish Stout and brewed our Dead Head Ale as well. The Irish Stout tastes amazing!

Rita Hayworth Strawberry Blonde Is Fermenting

Jessica and I brewed our wheat offering for this Spring season today. We went with a Strawberry Wheat brew and named it after Rita Hayworth's movie "Strawberry Blond."

This light, crisp beer will be perfect after a long day's work in our backyard garden paradise this spring/early summer!
